Tandoori Roti at AED 1: How to Read a Restaurant by Its Bread

The fastest way to read a Pakistani restaurant anywhere in the UAE is not the karahi and not the biryani. It is the price of a plain roti, and you can check it before you sit down.

Ours is AED 1. Here is why that number matters more than it looks.

The bread price test

A plain tandoori roti is flour, water, salt and a hot wall. There is nowhere to hide a cost in it and no ingredient to upgrade. Which makes it the one item on any menu whose price is almost pure signal.

In Ajman Industrial Area 2, the going rate is about AED 1 for a roti and about AED 2 for a naan. That is what the area charges and that is what we charge.

A restaurant asking AED 4 or AED 5 for a plain roti in the industrial area has told you where its margin comes from, and it is not the cooking. Bread is where a kitchen quietly recovers what it gave away on a headline dish. If the karahi looks cheap and the roti is five dirhams, work out what four breads for two people actually costs you before you decide the karahi was a bargain.

The reverse is also true, and it is the useful half: a kitchen charging a dirham for bread is making its money on food people came for.

The three breads, and what each is for

AED What it is
Tandoori roti 1 Unleavened. Flour, water, salt, straight onto the tandoor wall
Roghni naan 2 Leavened and enriched with milk and sesame. Softer, heavier
Butter naan 2 Leavened, finished with butter

Roti is the default and the right default. Unleavened means thin and flexible, which is what you want for scooping. It is also the bread that does not fill you before the food does.

Roghni naan is the one to order with a heavy dish. The milk and sesame make it sturdier, so it carries paya or nihari without tearing halfway to your mouth. If you are having paya at AED 10, order this.

Butter naan is the comfort order and the one children reach for. It is also the best match for the mild dishes — butter chicken at AED 25, or a white handi at AED 26.

And the parathas, which are a different thing

People lump these in with the breads and they are not the same.

AED
Sada paratha, plain, griddled to order 1
Desi paratha, layered and hand folded, fried in ghee 2
Anda paratha, with eggs done how you like them 4
Aloo paratha, spiced potato filling 4

A paratha is fried on a tawa, not baked in the tandoor. That means fat, and that means it is an ingredient rather than a vehicle. A desi paratha at AED 2 is layered and hand folded and it is the correct partner for a desi breakfast.

Sada paratha at AED 1 is the plain version and it is what most of the shift trade takes in the morning.

Why the kitchen opens at 7:30 and not 7:00

Small detail, real reason.

A clay tandoor takes about forty minutes to come up to temperature from cold. It is a mass of clay and it heats slowly and holds heat for hours once it gets there.

So if there is bread at half past seven, somebody lit the tandoor before seven. That is the whole explanation for our opening time, and it is also why a kitchen that has a real tandoor cannot casually open late.

How many to order

The most common mistake at a desi table, and it is always in the same direction.

Two breads per person with a gravy dish. Three if you are hungry. Then one more for the table. The gravy outlasts the bread essentially every time, and nobody has ever regretted an extra roti at AED 1.

For a half karahi shared between two people, four roti is the order — that is AED 4, and with a half Zafran chicken karahi at AED 15 it makes the AED 19 meal for two that is the best value on this card.

Order bread in rounds, not all at once. Bread out of a tandoor has a window of about ten minutes before it stops being the thing that just came out of a tandoor. Four at the start and four when you are halfway beats eight at once.

Common questions

How much should a tandoori roti cost in Ajman?
About AED 1, and a naan about AED 2. That is the going rate in Ajman Industrial Area 2 and it is what we charge. A restaurant asking AED 4 or AED 5 for a plain roti in the industrial area has told you something about where its margin comes from.
What is the difference between roti and naan?
Roti is unleavened: flour, water, salt, slapped onto the wall of the tandoor. Naan is leavened and usually enriched, so it is softer, thicker and puffier. A roti is the everyday bread for scooping gravy. A naan is richer and stands up better to a heavy dish.
What is roghni naan?
A naan enriched with milk and sesame seed, which makes it softer and heavier than a plain one. It is AED 2 here. It is the best bread on the card for a thick dish like paya or nihari, because it carries a heavy stock without tearing.
What breads does Zafran Kitchen have?
Tandoori roti at AED 1, roghni naan at AED 2 and butter naan at AED 2. On the breakfast side there are parathas: sada paratha at AED 1, desi paratha at AED 2, and anda or aloo paratha at AED 4 each.
How many rotis should I order?
Two per person with a gravy dish, three if you are hungry, and then one more than that for the table. The gravy outlasts the bread almost every time. For a half karahi shared between two people, four roti is the standard order and it comes to AED 4.
Is the tandoor a real clay oven?
Yes, and that is why the kitchen opens at 7:30 am rather than 7:00. A clay tandoor takes roughly forty minutes to come up to temperature from cold, so somebody has to light it before seven for bread to be ready at half past.
