If you have typed "Pakistani restaurant near me" into your phone somewhere around the Sanaiya, you already have a list. What you probably do not have is a way to tell the good ones from the ones with a nice photograph and a bain marie.

4. Check the price of a roti. In the Sanaiya a tandoori roti should be about AED 1 and a naan about AED 2. A restaurant charging four or five for bread is telling you where its margin comes from.

5. See whether they will tell you no. A kitchen that says "that is finished for today" at nine in the evening is a kitchen that cooked a batch rather than a week. That is a good sign, not a bad one.

6. Look at who is eating there at 8 am and at 11 pm. The Sanaiya runs on shifts. A restaurant with men eating nihari before work and families eating karahi late is a restaurant that has earned both.
