There is a particular kind of hunger that arrives at eleven at night after a long shift, and a particular kind of disappointment that follows when the place you drove to has the lights on but the kitchen cold.
In Ajman Industrial Area 2, most kitchens stop cooking between 10 pm and 11 pm even where the shutters stay up later. We cook until midnight, every day, including Fridays and public holidays. That is the short answer. What follows is how to make the most of a late order.
Open shutters are not an open kitchen
This is the thing worth knowing about the Sanaiya after ten. A lot of places will still sell you something at half past eleven, but what they will sell you is whatever is left in the pot from the evening service. The tandoor has been allowed to go out. The charcoal has burned down and nobody is going to relight it for one order.
The test is simple and you can do it on the phone before you drive over: ask whether the charcoal is still lit. Relighting a grill for one order is not something a kitchen will do at eleven at night unless it was already planning to cook. If the answer is yes, the rest of the kitchen is almost certainly still running too.
What is genuinely still cooking after ten
Some things survive a late order and some do not, and it is worth knowing which is which before you set your heart on one.
Cooked to order until close. Chicken and mutton karahi, all of the charcoal BBQ, the clay pot handi, and every bread off the tandoor. None of these exist until you order them, so the time of night makes no difference beyond the wait.
Depends on the batch. Biryani and beef pulao are cooked in batches through the day. At eleven you may get the last of a batch or you may be told it is finished. Ask rather than assume.
Usually gone. The weekly menu dishes are cooked once each morning and served until they run out. By mid evening most of them have. That is by design, not by accident.
Ordering so it is hot when you get there
The single most useful thing you can do late at night is send the order before you leave. Charcoal BBQ takes fifteen to twenty minutes on the coals and a mutton karahi takes longer than that. If you arrive and then order, you are standing there for twenty minutes at midnight.
Send a WhatsApp to 050 720 8707 with what you want and roughly when you will arrive. It will be boxed and waiting. There is no aggregator app in the middle taking a commission, which is also why the late price is the same as the daytime price.
A few orders that travel well and reheat badly, so eat them soon after:
| Dish | Price | Ready in |
|---|---|---|
| Chicken tikka, leg or chest | AED 10 | 15 min |
| Seekh kabab | AED 22 | 15 min |
| Malai boti | AED 25 | 20 min |
| Zafran chicken karahi, half | AED 15 | 20 min |
| Half chargha | AED 18 | 20 min |
| Butter naan | AED 2 | with the order |
The other end of the clock
The same kitchen opens at half past seven in the morning, which matters more than it sounds. It means the people cooking your midnight karahi are the same operation that has to be back for the breakfast trade, and a kitchen that runs both ends of the day cannot afford to serve you something it would be ashamed of at either.
If you are finishing a night shift rather than starting one, the breakfast menu opens at 7:30 am with mutton paya and beef nihari at AED 10 and tawa paratha at AED 1.
We are on Amman Street, Ajman Industrial Area 2, near Nesto Hypermarket, Shop 8/1, ground floor. Free parking outside, and delivery across the Sanaiya, Al Jurf, Al Nakhil, Al Rashidiya and the surrounding areas until close.
