Hyderabadi, Sindhi or Pakistani Biryani? Which One to Order in Ajman

Search for biryani in Ajman and you will be offered Hyderabadi, Sindhi, Pakistani, Lucknowi, Kolkata and Memoni, usually with no explanation of what separates them. Most people ordering do not know which one they actually want, and most pages about it are written by somebody who has not cooked any of them.

So here is the straight version, including the part where we tell you to go somewhere else. We cook one of these styles. We do not cook the other two.

The short answer

Style Method What it tastes like
Hyderabadi Kacchi dum. Raw marinated meat under parboiled rice, lid sealed with dough, both cooked together Rich and concentrated. Nothing escapes the pot, so the juices from the meat go into the rice
Pakistani, layered Pakki. Masala and meat cooked first, parboiled rice layered over, finished with steam Distinct bands. A mouthful heavy with masala, then one that is mostly fragrant rice
Sindhi Layered, but with a wet gravy, potato and dried plums Tangy and saucier. The aloo bukhara give it a sour edge the others do not have

We cook the middle one. That is the whole disclosure and the rest of this page assumes you have read it.

Hyderabadi: kacchi dum, and why it is hard

The thing that makes Hyderabadi biryani Hyderabadi is not a spice. It is a technique called kacchi dum, and it is a genuinely difficult way to cook.

Kacchi means raw. Dum means the sealed, slow finish. The meat goes into the pot uncooked, after hours in a marinade of yoghurt, ginger, garlic, mint and fried onion. Parboiled basmati goes on top of it. The lid is sealed with a rope of dough so no steam escapes, and the pot goes over a low heat until the meat and the rice are both done at the same moment.

There is no correcting it halfway. You cannot lift the lid, taste the meat and adjust, because lifting the lid is the one thing the method forbids. If the marinade was wrong or the heat was wrong, you find out when you serve it.

If that is the dish you want, order it from a kitchen that specialises in it. Ajman has several, some of them very good, and they are better at it than we would be. We are not going to pretend otherwise to win a search result.

Sindhi: the tangy one

Sindhi biryani is the style most people have eaten without knowing its name, because it is the one that turns up most often in UAE food courts.

It is wetter than the others. More tomato, more yoghurt, usually potato, and the signature: aloo bukhara, dried plums, which dissolve into the gravy and leave a sour note behind. If you have had a biryani that tasted faintly sharp and could not place why, that was the plums.

Some people consider the tang essential and some consider it a distraction. It is a real split in taste, not a quality difference.

Pakistani layered: what we actually cook

This is ours, described exactly.

Chicken is marinated and cooked in the masala first. Long grain rice is parboiled separately, so the grains stay separate and keep their length. The two are layered in the pot and finished with steam, with fried onion and kewra going in at the layering stage.

Because the rice and the masala never fully merge, you get bands rather than an even mix. One mouthful carries the masala, the next is mostly rice and aroma. That variation across the plate is the point of the style, and it is the thing a stirred-through biryani loses.

Served with raita, which is not a garnish. The yoghurt is there to sit against the fat and the chilli.

The claim we will make, and the one we will not

We will not tell you ours is the best biryani in Ajman. The emirate has dedicated biryani houses that cook one dish all day and have been doing it for years. That is a real advantage and we are not going to argue with it.

What we will claim is a batch schedule. We cook biryani in batches through the day rather than one large pot in the morning. The practical result is that the rice at nine in the evening is the same quality as the rice at one in the afternoon, which is not true of a kitchen that cooked once and is drawing down a single pot across fourteen hours.

The test you can run anywhere: look at the colour distribution. Good layered biryani is patchy, with white grains, yellow grains and orange grains visible on the same plate, because the colour went on in layers and was never stirred through. Uniformly orange rice has been turned over, which is what happens when one big batch gets agitated repeatedly across a long service.

Second test: ask when the batch was made. A kitchen cooking in batches will answer with a time. A kitchen cooking once will change the subject.

On the spice question, honestly

People searching for biryani very often mean spicy biryani, so this deserves a straight answer rather than a marketing one.

There is no trustworthy ranking of these styles by heat. We looked. The published comparisons contradict each other, the claims are not measured against anything, and the variation between two kitchens cooking the same style is far larger than the variation between the styles. A Hyderabadi biryani from one kitchen can easily be hotter than a Pakistani biryani from another, and the reverse is just as common.

What is more useful: on our card, the biryani is not the hot dish. If chilli heat is what you came for, the mutton Shinwari karahi at AED 34 a half is the one, and there is a page on what is actually hot on this menu. If you want the opposite, the chicken pulao at AED 10 is cooked on yakhni and is milder than the biryani.

Common questions

What is the difference between Hyderabadi and Pakistani biryani?
The method, mainly. Hyderabadi biryani in its classic kacchi dum form layers raw marinated meat at the bottom of the pot with parboiled rice on top, seals the lid with dough and cooks both together in one go. Pakistani biryani is usually pakki, meaning the masala and meat are cooked first and the parboiled rice is layered over them and finished with steam. Same family, different technique, different result.
Does Zafran Kitchen serve Hyderabadi biryani?
No. We cook the Pakistani style: chicken marinated and cooked in the masala, long grain rice parboiled separately and layered over it, finished with steam, fried onion and kewra, served with raita. AED 10 small, AED 15 medium, AED 20 large. If kacchi dum Hyderabadi biryani is specifically what you want, a Hyderabadi specialist will serve you better and there are several in Ajman.
What is kacchi dum biryani?
Kacchi means raw and dum means the sealed slow cooking. Raw meat is marinated for hours in yoghurt, ginger, garlic, mint and fried onion, placed in the bottom of a heavy pot, covered with parboiled rice, and the lid is sealed with dough so nothing escapes. The meat and the rice finish cooking at the same time in their own steam. It is harder to get right than the layered method because the meat has only one chance.
What makes Sindhi biryani different?
Sindhi biryani is the gravy heavy one. It carries more tomato and yoghurt, usually potato, and dried plums called aloo bukhara, which give it a distinct sour note. It is wetter and tangier than either the Hyderabadi or the standard Pakistani layered styles.
Which biryani is the spiciest?
There is no reliable answer and anybody giving you a confident ranking is guessing. Published comparisons contradict each other, and heat varies far more between two kitchens cooking the same style than it does between the styles themselves. The useful question is not which style is hottest but what a specific kitchen does, so ask them.
How much is biryani in Ajman?
At Zafran Kitchen in Ajman Industrial Area 2, chicken biryani is AED 10 small, AED 15 medium and AED 20 large. Chicken pulao and special beef pulao are the same three prices. A tandoori roti is AED 1 if you want bread alongside.
