
Biryani is the most ordered rice dish in the UAE and the easiest to get wrong, because the thing that makes it good is a step you cannot see and cannot rush.
Chicken biryani here is AED 10 small, AED 15 medium and AED 20 large. Beef pulao is the same three prices. What follows is what those sizes mean and how to tell a biryani that was made this afternoon from one that has been sitting since lunch.
Small, medium, large: what you actually get
Portion names mean different things in different kitchens, so here is ours in plain terms.
Small, AED 10. A working lunch. One person, no starter, no bread. This is the size most of the shift trade orders.
Medium, AED 15. A proper single meal with room for raita. If you are hungry after a long day, this is the one.
Large, AED 20. A generous single portion, or enough for two people eating lightly. For two people eating properly, two mediums beat one large, and it costs AED 30 instead of AED 20 for a reason.

Biryani or pulao: they are not the same dish
This trips people up constantly, and the difference is in the method rather than the ingredients.
Biryani is layered. The rice is parboiled separately, the masala is cooked separately, and the two are layered in the pot and finished with steam. Because they never fully merge, you get bands: a mouthful heavy with masala, then one that is mostly fragrant rice. That variation is the point.
Pulao is one pot. The rice cooks in the yakhni, the stock made from the meat and bones, and absorbs it as it goes. The result is even, milder, and more aromatic than spicy. Our special beef pulao is made this way, on the whole stock, the way it is done for a walima.
If you like a dish that changes as you eat across the plate, order biryani. If you want something gentler and more consistent, order the pulao.
How to tell a biryani that has been sitting
Look at the colour distribution. Good biryani is patchy: white grains, yellow grains, orange grains, because the colour went on in layers. Uniformly orange rice has been stirred through, which happens when a large batch is turned over repeatedly during a long service.
Look at the grains. They should be separate and long. Clumping means either too much water or too much time in the pot.
Feel the plate. Biryani that has been held is warm rather than hot, and it does not steam when you break the surface.
Ask when the batch was made. This is the fastest test. A kitchen cooking in batches through the day will answer without hesitating. We cook in batches rather than all at once specifically so the rice at nine in the evening is as good as the rice at one in the afternoon.
What to eat and drink with it
Raita comes with it. Beyond that, the classic pairing is something sharp to cut the richness, and the cheapest good answer on our card is a salty lassi at AED 5. Sweet lassi works too but doubles down on the heaviness rather than cutting it.
If you are ordering for a table, one biryani plus a half chicken karahi at AED 15 and four roti at AED 1 each feeds three people for AED 39 and gives everyone something to mix.
